THE WINE
All varieties were fermented in separate 10-ton stainless steel tanks for up to 10 days, at temperatures between 22 ºC and 24 ºC. Given the small harvest, it was possible to soak the skins before fermentation started. Azamor 2016 wine was aged for 7 months in used French and American oak barrels in our cellar. It was blended in January 2019 and was bottled in August 2019.
